Bai Mudan (Chinese: 白牡丹; literally: "white peony") is a type of white tea made from plucks each with one leaf shoot and two immediate young leaves. Bai Mudan is sometimes preferred by white tea drinkers for its fuller flavor and greater potency than the other major type of white tea. Bai Mudan is a white tea, therefore, it is a slightly oxidized tea. The plucks are sun-withered for an extended period of time and then piled briefly for oxidation, during which enzymes of the tealeaves interact with other constituents to form new materials that result in the final taste and aromatic character of the tea. Depending on the weather, conditions of the pluck and the taste style requirements of the finished products, the sunning may last between 1 to 3 days and the piling between one half and 3 hours. Bai Mudan, White Peony is a sweet, mild Chinese tea made from unopened tea buds, as well as the two newest leaves to sprout. The freshly harvested leaf is allowed to wither dry in the sun. The natural oxidation that takes place during this withering gives White Peony beautiful, plush flavors. The nose is warm, floral and rich like fruit blossoms. The liquor is golden and bright. Clean, succulent floral-fruit flavor, melon sweetness, a touch of gentle savoriness and rounded mouthfeel. White tea steeping time and temperature varies with different tea. The hottest steeping temperatures are 81 to 87 °C (178 to 189 °F) water and the longest steeping times two to three minutes. The coolest brewing temperatures are 61 to 69 °C (142 to 156 °F) and the shortest times about 30 seconds.
