Why Cinnamon Cinnamon Cinnamon is BETTER than Regular Cinnamon Bark (Cassia) Cinnamon Bark has a natural flavor material known as'coumar'. The coumarin content in cassia cinnamon is about 7-18 milligrams of 1 teaspoon, while the coumarin content in Ceylon cinnamon is too few, about 0.004% only. The use of coumarin allowed daily is approximately 0.1mg per kilogram of weight. Means only 5mg a day for those who weigh 59kg. So only one teaspoon can exceed the allowed limit every day.
