Canton Pak Choi is the long white stem. Growing Pak Choi From Seeds:In a fertile well-draining soil, sow seeds in the spring after the last frost to early summer, or late summer/early fall. Prefer growing temperatures between 60-70°F. When the temperature falls below 50°F for a stretch of time, use mulch to avoid premature bolting. Pak Choi can fully be harvested in 50 days. Some people prefer a more tender leaves by harvesting early around 30-35 days. When harvesting consider early morning for fresher vegetables by cutting the short root stem below the base.
